There are two different methods of achieving this kind of look.
On natural granite worktops, it is common to mill the drainage area out of the surface, meaning the worktop is fabricated from one piece of material.
For engineered quartz surfaces, the best practice is to cut a hole in the worktop to the size of the drainer, then mount a new piece of quartz underneath as the recessed drainage and sink area. This is because it is not possible to repolish a large engineered quartz surface to the quality of a factory finish.
